These fun little monsters are part of my mission to be able to make decent biscuits!!
They are adapted from a gingerbread man recipe but the recipe and timings still need to be sorted as they are not quite perfect! They do look fun (icing not my strong point!).
These ginger biscuits come from my new cook book
” The Great British Book of Baking”
The recipe is really simple:
350g self- rasing flour
1 tablespoon ground ginger
1 teaspoon bicarbonate of soda
200g Caster sugar
115g unsalted butter
85g golden syrup
1 medium free range egg
35g stem ginger finely chopped ( i used cyrstalised)
Sift flour, ginger, bicarb and sugar into a bowl
Melt golden syrup and butter over a low heat then add to the flour, stir.
Add all remaining ingredeints and stir until a dough is formed.
Mould into walnut size shapes squash them into discs and then bake at 170 degrees for 15min or until golden brown.
Remove from oven and leave to completly cool.
I chose to decorate mine by melting white chocolate, putting it on a spoon and swiftly moving the spoon to form white chocolate lines accross the biscuits!
